  1. This is a quick one.
  2. In a medium skillet, heat the oil over medium heat. In a small bowl, whisk together the eggs and tomatoes until thoroughly combined. When the oil is hot, add the egg mixture and cook until the eggs are cooked through.
  3. Season with salt and pepper and serve.
